Natural Balance is the eighth installment in our Barn Quilt series, and is a blend consisting of two-year-old spontaneous beer. Andrew’s favorite barrels are typically 18 months old, and he did this blend as a personal challenge to see if it’s possible to build a geuze-like flavor profile using beer from only one brewing season (early 2018 in this case). The handful of selected barrels were all uncharacteristically assertive on their own, exhibited unusually diverse flavors, and pairing them went against intuition and our typical blending process. However, the result is effortlessly cohesive despite the challenge of finding the natural balance between these strong pillars of flavor. Even though this blend only contains barrels from one coolship season, it is inspired by three-year beers from Girardin and 3 Fonteinen, and attempts to capture a similar complexity. To that end, it has a supportive bitterness from the cheesy aged hops that props up lively flavors of gin botanicals, honeydew melon, sesame seed, and dry oak. It finishes with a round, lingering funk and limestone minerality that leaves us immediately wanting another sip. Drinking Natural Balance next to Oude (our three-year-old spontaneous beer blend) is a thought-provoking experience and allows you to examine the merits of each vintage for yourself.
