Pastiche began as a blend of beers brewed over our 2019/2020 spontaneous brewing season exhibiting wonderful complexity and inherent stone fruit qualities. We then transferred the blend to VSOP and XO brandy barrels (formerly used for bourbon and white wine respectively) where it rested for an additional 7 months. Finally, we transferred Pastiche to stainless to referment on fresh peaches from Thrall Family Farm in Windsor, CT - a perfect companion for the perceived sweetness and hint of vanilla offered by the barrels
