Just as our first three-year blend of lambic-inspired spontaneous beer was coming together in early 2021, we took receipt of some freshly-emptied and uniquely characterful fortified wine barrels from France. For an encore presentation of that first batch of Triolet, we finished half the blend in Pineau des Charentes casks and have the blend on Muscat de Rivesaltes casks. Both bottles showcase the subtle and beautiful ways these beautiful casks transformed the beer
