For this latest edition, we aged the beer for a year in an equal combination of eight-year-old Blanton’s bourbon and 12-year-old Weller wheated whiskey barrels. The wheated whiskey barrels accentuated Parabola’s signature richness with fine notes of cereal grain, while the bourbon barrels imparted their classic notes of toasted coconut and cocoa nibs.

    Panda, courtesy of SHIG, pours with a deep dark colored body that supports a tiny light tan head of foam. The aroma offers up dark roasted malts and maybe even molasses drizzled dark roasted coffee moving into mild whiskey laced with thick ribbons of booze. The taste delivers an interesting array of notes. I get early hits of dark roasted malts and then an odd whiskey barrel character wrapped in booze. To midway reduced molasses like sugars flow toward the finish and instead of picking up steam, it picks up booze leaving you slightly warmer on the inside. Nice sipper.
