Miss Spelt was a hefewiezen that we worked with for a while about two years back. We decided to brew it again and this time allowed it to sit in our kettle with a sour wort culture for 24 hours. The result is a beer with nice fruit qualities and a refreshingly light but tart finish.

Looks like a normal hefewiezen with a nice head of foam but aroma was pretty weak. Super drinkable and refreshing. Not complex but the sour tartness is great. Only a little bit of a wheat backbone comes through this sour tasting beer. I liked it.
