Guava Grove is an American Sour Guava Ale that experiences three fermentations. Primary fermentation is conducted with lactobacillus, a bacteria that sours the wort. The secondary fermentation takes place when we add a saison yeast that is French in origin. The tertiary fermentation is spurred by the addition of one of Tampa’s favored fruits, guava. The acidity of this elegant ale cuts fatty foods and oily fish from the palate beautifully. Pairs well with mussels cooked in gueuze, ceviche, ferrines and rich, creamy cheese or cheesecake.

    Enjoyed at gabf 2014. It pours with an opaque deep gold body that has copper hues and supports a nice looking tan head. The aroma is big and musty and guava-y as well as tart and funky and then lingering with some sweet fruitiness into the end of the draw. Wow, the taste is a great mix of acidic tartness, fruity guava notes and lots of tasty guava going on. It ends with a sweet guava fruitiness right into the after taste. The taste is a great mix of acidic tartness and tasty fruity guava goodness (that I thought was lacking some in the standard Guava Grove offering but it is here in spades). Refreshing. Very nice.
