Le solera est une technique de vieillissement et d’assemblage où des brassins passent traditionnellement d’un baril à l’autre dans un empilage de fûts de chêne. Notre Solera rouge a reçu un ajout de moût de raisins en fermentation secondaire, ajoutant une douce saveur de vin rouge au produit final qui, après le vieillissement de six mois dans le processus de solera, a acquis un caractère fermier légèrement sure. L’acidité créée par les bactéries acidophiles amène à notre Solera rouge une complexité en bouche qui, alliant des notes d’agrumes et de petits fruits rouges, en fait une bière hybride des plus agréables. A solera is an aging and assembly process in which brews are traditionally transferred from top to bottom in stacked oak barrels. Our Solera rouge received an addition of grape must during the secondary fermentation, adding mellow flavours of red wine to the finished product. Six months of aging in our solera process, imparted a slightly tart farmhouse caracter. The acidity created by the acidophilus bacteria in our Solera rouge delivers a complexity in the mouth that, with citrus and red berries notes, makes it a most pleasant hybrid beer.

Picked up a bottle at the brewery. Pours an average foamy bubbly pinkish head and has a dark reddish appearance with ruby highlights. Lacing is decent. Aromas are dark fruit, cherries, acidic. Flavours are mostly cherry notes, some subtle yeast, very tarty and some slight sourness. Somewhat excessive carbonation. Not bad.
