Aged for eighteen months in fresh Cabernet Sauvignon wine barrels, Dihos Dactylion features a primary fermentation using a proprietary blend of saison yeasts, a secondary fermentation of our house brettanomyces wild yeast strain, along with lactobacillus and pediococcus bacteria added to sour things up. Dihos Dactylion bursts with aggressive aromas of red wine and a touch of brett; delightfully sour to the taste, initial lactic acid flavors hit high in the cheekbones before transitioning to complex layers of soft fruit, oaky-tannins and red wine.

    12oz bottle, bottled 2/11/11. Pours a clear dark reddish amber with a medium off white head that quickly goes to a thin film that leaves some lacing.

    The aroma is a whole lot of sour - some tart fruit with some vinous alcohol and some wood.

    The flavor is sweet tart and sour fruits with some wood and some vinous alcohol leading to a dry, acidic, bretty, finish. As it warms it gets a little musty and leathery. The alcohol is surprisingly well hidden. The mouthfeel is medium to full bodied with smooth carbonation.

    Overall, an excellent, complex sour. It's a little on the acidic side, but overall, well balanced.

    Thanks to TOM! .. . Pours a murked brown, sturdy light lacing .. . aroma of cherry skin, dirty girl socks, and brown funk .. . slick and wild, shit! this is a great beer, so happy i got to try it!! .. . Well if you think there is one iota of ambition in my nakedness then you severely underestimate me!
