Wild Rivulet V2 is another take on a collaboration beer we brewed with Oxbow—using Pilsner base, local wheat, and local oats. On and around the original brew day, we put this collaboration beer into various barrels—including bourbon and wine barrels—and aged them for around a year. The barrels were then blended back together and refermented in the bottle with Brettanomyces; the original Wild Rivulet was refermented with champagne yeast. Wild Rivulet V2 carries hints of citrus and wine-like aromas that are augmented by tartness and delicate funk.
