All of our Coolship beers are fermented using solely wild microbiota found in the open air. Only Coolship Merus goes unblended—meaning all of this batch comes from a single barrel, rather than a blend of multiple barrels. This year’s batch aged for two years in an American oak barrel and is layered with complex flavors like lemon, dried fruit, and oak.
