The husband-wife duo of Nate Cornett and Lisa Wolters knew what they liked — good beer, interesting art and their funky hometown of Yellow Springs — and thought others might too. Yellow Springs Brewery became a synergy of all three — a true community brewery for villagers and visitors alike, an intimate art gallery displaying eclectic work and, most importantly, a haven for seasoned beer lovers as well as the craft beer curious. People responded immediately. Since then, Yellow Springs Brewery hasn’t been able to brew fast enough. Customers praise the brewery’s well-balanced beers, ever-changing taps and bold takes on familiar styles. Patrons love the art-filled taproom just a few blocks from downtown Yellow Springs along the Little Miami Bike Trail and sited in an industrial building that once housed a cannery and seed company. The more than 100 area bars and restaurants who serve its beer can’t get new kegs fast enough. Earning the respect of their peers, Yellow Springs Brewery is frequently sought for collaborations and tasting events. In the summer of 2015, the brewery doubled in capacity from a 7-barrel to a 15-barrel brewhouse, and anticipates a rise in production from 700 barrels in 2014 to 5,000 barrels per year. A new canning line will start rolling out in fall 2015 two of YSB’s most popular brews — Captain Stardust Saison and Zoetic American Pale Ale. At Yellow Springs Brewery, the beer has always come first with the use of high-quality ingredients, experimentation within styles, a constant striving for freshness and a respect for tradition. While craft beer trends come and go, Yellow Springs Brewery — only the Dayton region’s second brewery when it was founded — has set itself apart by its authenticity. Small and family-owned, the brewery isn’t riding the surge in craft beer sales to make a quick buck, but to spread the gospel of good beer. The brewery’s motto, Crafting Truth to Power, speaks to the value of creativity and craftsmanship in an industry still dominated by mass-produced, low-quality beer. At Yellow Springs Brewery, the beer is by and for people who care about flavor.
