Nick, having renovated the adjoining Griffin pub from its derelict state, went on to build the micro brewery from scratch. His past experiences in construction and engineering were extremely useful to this end. Rik Lyall brought his own expertise to the venture, having been head brewer for Cottleigh, Hopback and Bunces breweries. The partners love of beer dates back to when they first experimented with making alcoholic beverages at the tender age of 13. Back then they made beer from just about anything they could get their hands on including nettles, rice...... and even raisins, glace cherries and strawberries! Nowadays they prefer to stick to the more traditional beer styles containing the simple ingredients of malt, hops and water, exemplified by their leading brands 'Nicks', 'Beer' and 'Gulp'. However their early begginings are perhaps echoed in the novel ingredients of locally produced honey and elderflowers, which are used in their increasingly popular 'Elderfizz', a naturally effervescent wheat beer.
