Brew Rebellion is an unusual place. We brew beer in quantities of thirty to fifty gallons at a time. The great thing about this is that we have a tap list that features a revolving, rotating list of six or so beers that are the result of the thought process that Andy, our master brewer, dreams up in collaboration with Brad, our brewery manager and Andy’s partner in crime. I tell folks that come in to our brewery, that we operate a lot like Costco when it comes to inventory. If you see a special item on a visit there, you better buy it because it may not be there the next time you shop. Our tap list is the same way. While we have our mainstay brews available most of the time, Peach Honey Wheat comes to mind, the Chris Martin Porters, the Chocolate Raspberry Stouts, the Amber Ann Ale just to name a few, grace our menu as they see fit and usually just in time for the moment they are needed. Brewing in small batches gives our customers an opportunity to have their palates tickled and offer an opportunity for their taste buds to party down. We use fresh, local ingredients whenever possible. We honestly do our best to provide an exceptional product and despite that thought and word being overused by insincere multinational, gigantic companies, we mean it. This is our story: Only in this great country can three guys who have no money at all, meeting the normal burden of paying bills and keeping a roof over their head and the heads of their family, could possibly believe that they could realize the impossible dream of opening their own craft brewing business with an attached tasting room. Andy and Brad have been home brewing for years together and through trial and error have come up with some amazing and tasty brew concoctions. Special recipes like “White Chocolate Raspberry Stout” or the cinnamon and cloves party in your mouth seasonal winter warmer recipe called, “Peace on Earth” or the sitting around the campfire approved S’mores Porter or what about the fruit and honey light taste of “Peach Honey Wheat”. Brad and Andy have known Ed for some time and the boys knew that an old fart like Ed with a business background made him a good candidate to help them put together a business and marketing plan. Since Ed is a big fan of craft beer, he said, why not? “Let’s build a brewery”. Now since all of our politicians and their banker friends have decided to shipwreck our economy over the last few years, Brad, Andy and Ed had no place to go get a business loan and even if they did, no one would have given them funding for a risky venture where three guys were planning on drinking beer and hanging out with their friends for a living any way. Ed, ever the resourceful entrepreneur had an idea.” Let’s take all of the crap out of our garage and sell it at the swap meet?” So they did just that. They sold sports cards, Andy’s favorite massage table (don’t ask), all of Brad’s toys that his kids didn’t use again and including his treasured Dan Marino collectable’s, Michael Jordan hard to find items that Ed was storing up for a rainy day, in other words the boys went back time and again to the Beaumont swap meet until it was all gone and the start up money was in the bank. As the story rolls forward, the next item on the agenda was a building. Brad asked the lady who ran the local Mexican market if she would rent us knuckleheads the back storage area to start our brewery. To our surprise, she said yes and the permit process has begun. Have you ever heard the example of the frog being boiled? The cook starts with cool water and gently increases the flame until the point where the frog figures, what the heck I might as well do the back stroke while I’m here. That’s how the permit process is when you open a brewery and after our experience we have come to the conclusion that it is a lot of work but in the end, worth it.
