Tribute is a new beer made in an old style. The Barley Wines of old date back to the days of yore when a special ‘heavy ‘ale was needed for the times when a common beer would not do. Tribute is brewed by hand using an Elizabethan ‘DoubleWort Mashing’ process that yields very high gravity wort. In this process the mashing and sparging process that yields a normal beer is repeated a second time. The second mash and sparge is done using the wort collected from the first mash instead of water. This concentrated wort is boiled with New Zealand hop varieties and given a long warm fermentation with a traditional London Ale Yeast, which precedes a long cold conditioning period to let the flavours harmonise. The result is a mellow, warming ale with layers of biscuit, roasted hazelnut and maple syrup, with hints of black current and toast. Tribute is an intense and rewarding vintage ale, made to be sipped and savoured slowly, preferably after a few years maturation in the cellar.     Pours a dark copper/brown with a ring for a head. Old style barley wine. Mild caramel malt-like aroma. Medium sticky mouthfeel. Very sweet flavour. Caramel, nutty, bready and fruity. A bit smokey and a hint of hops. Sherry like flavour. Alcohol warmth comes through towards the end.

    Pours a very small amount of foamy head but doesn't stick around very long. Has a murky copper/brownish appearance. Very weak lacing. Aromas are yeasty and nutty. Flavours are mainly nutty and toasty malts, some hints of brown sugar, toffee and raisins. The alcohol is fairly noticeable but blends well into the flavours. Somewhat of a wet mouthfeel. Has an astringent sensation on the palate. Goes down pretty good though.

    Single small bottle from the LCBO, written Vintage 2012. Pours a clean copper colour with deep amber highlights. Small creamy beige head that disappears quickly enough, but creates a nice film around the glass at the top of brew. Big sweet nose with lots of dark fruits (dates, raisins). Slick oily mouthfeel with the alcohol well-hidden. The taste is sweet, but not in an overkill way. Nicely blended grassy hops over the caramel base, with the dark fruits in the background. A very nice warming sipper.

    The beer pours a translucent dark coipper colourn with brown hints and a thin tan coloured ring for a head. Aroma is sweet malt, molasses, and weak hops. The mouthfeel is medium bodied with average carbonation. The flavour is very sweet with notes of brown sugar, caramel, and hint of hop bitterness in the finish.
