With this one we gave it a twist on a modern classic, the Wheat wine. A locally produced bio juice made up of ginger, honey and sea buckthorn was added, then we’ve aged it in red wine barrels for up to 6 months. What we wanted to achieve was a balance between the sweetness of the wheat and honey, the acidity of the wine barrels, the bitterness of the sea buckthorn and the spiciness of the ginger. All…
