Welcome to our Field Mouse’s Farewell. It’s a late spring seasonal beer: French, rustic, 7%, full of different grains: Rye, Oats, Wheat and Barley. Like what a mouse would eat. The hops are Strisselspalt from Alsace, and Bramling Cross from England, and we combined Belgian and English yeast strains. Oldy woldy worldy.

    Sampled on 6/25/2011. This saison pours a slightly cloudy orange gold color from a 22 oz bottle. Medium sized thick rocky foamy head, with nice lacing and good retention. The aroma is spicy, fruity, citrusy and sweet. A medium to full bodied saison. The malts are fruity and sweet, orange and orange peel. The hops are herbal and slightly spicy. All the grains in this beer give it a very full and round mouthfeel, its almost like the chewyness of an oatmeal stout. Nice carbonation. A touch sweet and perhaps a little funky. Very nice sipping beer. Mouthfeel is full and round. Finish is clean and smooth. Aftertaste is slightly sweet and a touch spicy.
