Copeland Springs is a 100% hop-free gruit, with ginger, anise hyssop, and lemon balm substituting for hops as the beer’s bittering/herbal component. It’s refreshing, slightly sweet, and herbaceous. The beer pours a dark hazy golden color with a thin white head. Herbal and fruity aromas take center stage, with hints of soft lemon, spicy anise, and delicate ginger. The palate is herb-forward, but by no means one-note: a wheat-heavy grain bill and our local farmhouse yeast add delicate layers of complexity to round out the beer as it lingers on the palate.

    Taps clear golden with a thin eggshell head. Aroma features fruity, sweet malt, and above all sharp coriander notes. Flavor delivers fruity and coriander tones plus a hint of fresh malt. Body and fizz are average, but this is refreshing. Get an edge on!
