Dinkel Saison is a blending of traditional and new world beers. For this recipe, we adjusted the water with minerals salts to match the same profile you would find in Belgium. Then using Spelt Malts with a Farmhouse yeast we created a complex fruity flavour with a great mouthfeel and finally hopped this 5.5 % 30 IBU with Zythos, Lemondrop and Vic Secret. This New World Spelt Saison is well balanced between the Saison profile and the exotic hops. Nothing aggressive, just soft, complex and crushable.

Bottle from the brewery. Pours a slight hazy light-yellow colour with a warm cap and some foamy lacing. Fresh Saison yeast nose with some grass notes. Decent fresh grassy hops flavours with the yeast and a nice dryness. This is a nice all-around Saison.
