Beer Description:
Jose is a live lacto gose that we mash in with 70 pounds of sectioned Key limes in order to provide the correct pH environment for saccharification. The primary benefit of this esoteric technique is that we are left with residual lime flavors in the finished beer, and secondarily we aren't using food grade acids, which tend to be on the harsh side. We use this same technique with our Meyer lemon gose, Meier, which we name after our good friend Troy Meier. In keeping with this naming convention, we are naming Jose after our good friend Jose Martel, who loves a good Key lime right in the kisser. In order to celebrate Jose's funky ways, we also co-pitched with some Brett Brux var Drei to add a bit of funk into the mix. Salud!
