A different recipe from the Hellwoods stout, we brewed this beauty in November of 2012. It was conditioned for 3 months before being transferred to Cognac barrels from Portugal, where it sat for another 3 months before being released on our birthday, April 6. A beautifully balanced marriage of complex stout flavours and Cognac barrel flavours. Get some while it lasts! Delicious!

On tap at the brewpub, 11.4%abv. Pours a good size frothy tan head and has a deep dark black appearance. Decent lacing. Moderate carbonation. Aromas of dark roasted malts, chocolate, hints of vanilla. Flavours are mostly chocolate, roasted malts, notes of molasses, oak, a bit of brown sugar in the finish, even cookie dough. The cognac makes an appearance much later once warmed up a little bit, giving it a nice warm mouthfeel. Yum!
