Part of our Wild Zymology Series. This unique beer is brewed like a quad but fermented using 6 to 7 different yeast straisn including 3 brettanomyces strains. 2 Brettanomyces strains are Enviromental Isolates we isolated from our very own heritage building and 1 Sacharomyces strain was also isolated by us on a ground cherry in near-by Alymer. A unique Brett-Quad with a layered complexity.
