In the little town of Bavay, only a few miles from the border with Belgium, the Theillier family has crafted its fine bière de garde for generations. The charming brewery is built into the Theillier family home, which was constructed in the 1600's on sturdy Roman foundations. La Bavaisienne is artfully brewed, in very small batches, using a resourceful combination of ancient and modern equipment.

750 ml capped bottle, as a 6.5 % ABV. Poured a clear and ruby-brown coloured BdG with a generous two fingers light beige, dense and creamy foamy head that had a very long retention and tons of micro bubbles. Sustained carbonation. Good lacing. The aroma is caramel and toasted malts,brown sugar and clear marked aromatic hops, resin. The flavour is powerful caramel and toasted malts, cooked red fruits, plums, prunes, raisins and pears. The mouthfeel is round, quite thick and well balanced between the malts and the hops. The texture is oily. This medium bodied BdG has a dry caramel malts and hoppy bitter finish. A good example of what a French Bière de Garde can be. If you have the chance to get one or more bottles from the tiny production, don't miss your chance and you'll be a lucky man.

biere de gardes- still a mystery .. . pours a medium gold, decent foam, quite a bit of floaties .. . aroma of wood, earth, and day old showered french person .. . light and refreshing beer, more earth and some bread, pretty clean stuff .. i enjoyed this .. . You know what I haven't had in a while? Big League Chew.

What a treat to find this in Grand Junction Colorado. That being said this bottle was not the freshest but I still loved it. Aroma is malty and sweet with a lot of raisins. Pours a very hazy burnt orange with some off white head. Mouthfeel is medium to full body with a very silky Finish. Flavor was peppery and sweet with some plum notes and a solid malt backbone...

Bottle courtesy of Turdfurgeson: Poured a deep slightly hazy brown color ale with huge white foamy head with some good retention and some good lacing. Taste of deep malt with some balance sweetness and some spicy yeast. Body is full with some great carbonation and no alcohol could be detected. Lots of character with a nice creamy body. The balance in this beer is just incredible. I would love to try this again.

Bottled (As ambree). Amber colour, huge beige/off-white head. Aroma is malts, yeast, caramel and some earthy notes. Flavour is quite the same. Fullbodied, but quite boring.

Hmmmm i loved this beer. Poured an amber with massive head with amazing lacing. Aroma was citrusy and spices. Flavor was muc hteh same was a little sweet. Aour in the aftertaste.

Brewtopia’04. Smells sweet, cugary, and cherry-ish with some musty old fruit. A pile of sweet maltiness dumps from the glass and splashes down all over the palate. Sweetness yields to sour and bitter. What a lovely find on the Shelton Bros table at the fest, not an everyday beer, to be sure. It’s not so Belgian yeasty as man French beers tend to be, but it IS quite peppery. Wonderful.

The deep amber body is topped by a voluminous whipped custard head that clings to the glass for dear life. This is perhaps the maltiest of the style that I’ve had to date with rich caramel malts providing the base of the aroma and flavor. There’s a good bit of apple peel fruitiness and the flavor is a tad sweet. The only thing that bugs me about the beers is a slight harshness in the lingering bitterness of the finish. But the bitterness seems to fade as I drink it, so it could have been something to do with the temperature. Definitely gets better as it warms.

A bottle I shared with The Crew, while sipping more than a few excellent beers at O'Brien's this evening.
Maybe it's where this beer fell, as far as the order of other beers go, but this seemed to have more weird quirks than what I'm normally used to finding in this sort of style.
The general consensus from those in attendance was that this was basically "wet wood, moldy fern, damp leather, moist hay"-ish overall.
The appearence didn't help matters any. Way too many weird floaties in the beer to really be all that impressive. Kinda creepy, to be honest.
But things take a turn for the better with the aroma and flavor. Yeah, it is rather musty and "dirty" -- this fits the style, and is not unwelcome IMO. But enough interesting things going on here (as well as the mouthfeel and overall drinkability score) to make this a worthwhile try. Pales in comparison to the Russian River belgian-style beers that we had before this, and likewise with the Fantôme La Gourmande that we had after.... But FWIW, this isn't bad at all....

Medium orange color. Medium sized white foamy head. Aroma is barnyard. Leather and must. A medium bodied biere De Garde. Malts are fruity and funky. Earthy and bready. Kind of sweet. Nicely balanced. Very nice beer. Smooth taste. Mouthfeel is full and round. Finish is clean and smooth. Aftertaste is slightly sweet.
