The Exchange’s ß Brettbier showcases the collaboration of wheat, spices and wild yeast. It’s fermented with a blend of multiple Brettanomyces cultures for a fruity and funky take on the traditional witbier style. With a 5.8% ABV, the ß Brettbier has subtle spice on the nose, complimented by esters of tropical fruits from the Brettanomyces. Light straw colour and with a light funkiness, this brew is a great refreshing crowd-pleaser that holds enough complexity to appeal to sour beer aficionados. Its small bottle format (330ml) also makes it an approachable product to discover for novice beer enthusiasts.

    Cool mini champagne like bottle, 330ml, from LCBO. Pours a fairly small foamy white head and has a slightly hazy golden appearance. Lacing is ok. Aromas are somewhat perfumy, grass, yeast and citrus. Flavours of citrus and Brett yeast are strong straight away, some lemony tart notes as well as a bit grassy. Very subtle spice hints. Quite a lot of sourness on the palate.

    Cloudy-hazy golden-orange colour with a creamy-ish off-white head, good stay and some creamy-foamy lacing. The Brettanomyces are felt right away with the earthiness and sourness. Still, not crazy strong, as balanced with the witbier yeast and mild spices. The taste starts off sour and has good lingering. Here, being a little stronger, it kind of overtakes the witbier character. Wish this not happen. Still, a decent Brettbier.
