German inspired sour wheat beer (based on our Été Indien). The obvious and domineering acidity of this beer is obtained by letting the unboiled wort go sour for several days. The Solstice d’Été is made complete by the addition, during the fermentation process, of a phenomenal quantity of whole fruit (raspberries or cherries) which compensate for the sourness of the beer. The result is a very refreshing beer where both acidity and fruity flavours dominate wholeheartedly.

    Enjoyed at the brewpub on my Quebec Beer Run October 2017. Pours a red colour with a red-pink head and lacing all-around. Cherry aromas with some sugars and hints of vanilla cream. Sour tasting with the cherries showing in the finish. The mouthfeel is slightly tarty, but crisp overall. Quite easy drinking, refreshing summer fruity beer that is a step up from regular fruit beers.
