Cette version du projet Symbiose est un assemblage de bière sure aux cerises et de IPA belge qui ont été élevées un an dans des fûts de chêne inoculés avec des levures sauvages. L'arôme fruité provenant de ces levures se marie parfaitement à la cerise, tandis que les délicats tanins du chêne complètent les flaveurs de la IPA belge.

4-pack from the St-Jerome brewery on my Quebec microbrewery tour (first stop). Pours a hazy peach (amber-pink) colour with a fizzy white cap with pink hues, leaving quickly enough with just a touch of lace. Wild yeast aromas with some of its earthiness and the cherries in the background. The taste is sour, but not too crazy, with light tartiness and the cherry notes. Very, very mild for a 7% beer. I have a hard time finding the IPA and the Belgian notes. Maybe slight hops lingering. Not a bad blend, but not my favourite from this great brewery.
