The brewers use lactobacillus to create a breeding ground in the oak wine casks. They then roll 40 kg cherries through the narrow opening in the barrels into 170L enfant Terriple. The yeast needs 5 months to break down all the sugars and for the gentle acidification process to work its magic. Over this period the cherries slowly release their blood red colour and tasty flavour. The result is a ‘thoroughbred’ triple kriek. And as for the name… Cherries are ‘cerises’ in French and so the Cuvéé Soeur’Ise was born. A fine figure of a nun. The brewers claim it is impossible to lead their little nun astray…but they believe that she is more than capable of leading others into temptation… The label was designed by Tinus Vermeersch.

    Big foamy pink head with great retention and soapy lacing. The brew is cloudy, cherry red coloured with a slight amber hue. Citric nose with some soft cherries and other fruity notes. The taste has some sourness, but not as strong as a standard lambic. Mild cherries with some tartiness from the yeast. Hints of oranges and other citruses. A stronger lambic that is quite refreshing and lightly fruity. I was expecting a little more punch though. Nicely brewed overall.

    Pours a big foamy bubbly pink head that dissipates fairly quickly and has a cloudy reddish/pink appearance. Weak lacing. Aromas are dark fruits (raspberries, cherries) sweet malts and yeast. Flavours are a bit more on the sour and tart side, cherries are noticeable, and actually quite fruity. Has a little bit of a tarty mouthfeel.

    The beer pours a semni-rteanslucent cherry red colour with a long lasting off-white/pinkish head. The aroma is cherry, wild yeast, vinegar, and grains. The mouthfeel is medium bodied with above average carbonation. The flavour is vinegar, light cherry, yeast, and grains. A top 1% beer on Ratebeer, but I'm not feeling it.
