A healthy dose of saaz hops are used to add a spicy element to the beer. Prairie Ale is fermented with a mix of ale yeast, wine yeast, and brettanomyces. Notes of black pepper and pineapple can be found in this beer.

    April 2015: On tap at Cardinal Pub & Bar, Stavanger. Hazy pale yellow colour, large white head. Distinct aroma of brettanomyces / farmhouse, wine yeast, lemons and green and black peppercorns. The flavour is medium dry, a slight acidity but not really sour, distinctly yeasty, with loads of green and black peppercorns. Not very bitter. Unusual and interesting, but maybe too yeasty?

    500ml bottle from Willow Park (Calgary). No steal at $11, but Oklahoma beer is hard to come by. What a fucking mess when I popped the cap - it foamed over endlessly. What a start. Still, the pour was mega-cloudy medium gold 'neath a white head. Tart aroma, edging on sour. Flavour was similar. Nice spice, too. Solid mouth, tart finish. Too bad we got off to a rough start.

    Pours super hazy straw color with a huge creamy head. Smells very dry, bretty, wet hay and pepper and some kind of spice I can't place. Some mild hops. No acidity but some funk.Taste is similar. Very dry, nice funk, nice hops too but not a super hoppy saison--more hops in the taste than the nose though. As the beer airs the hops become more prominent, they're spicy and tropical (pineapple?) but not much citrus. Very slightly tangy in the finish. Nice mouthfeel, good carbonation, nice balance and really well crafted. Grows on you as you drink it.
