A slightly hazy golden colored brew. We used a combination of noble hops to bring in earthy and light citric hop notes. Belgian yeast notes, light spicy flavors, soft lightly sweet malts and a crisp dry finish. This is a favorite recipe and one that we've enjoyed cellared for up to two years.

One of my good friends brought this back from his trip to the Northeast. Label reads: Bottled January 2011, Batch 2, Bottle 1044. ABV reads 9.5%, as opposed to what is posted above. If I didn't read the word "tripel" on the label, then I would not have put it in that category. Belgian strong ale, maybe. Very yeasty, biscuity, and musty. None of the bright fruity flavors that I normally see in this style. Thank Zues there is none of that pink bubble gum crap. Cloudy yellow color with a TON of FOAM...you have to give it a couple of minutes after pouring if you expect to drink it. Something rather sour...like good San Francisco sourdough. While I did not taste any of the alcohol, I am certainly feeling it as I near the end of the bottle. A great beer; I just wouldn't call it a tripel is all.

Labeled as their 2009 Holiday Ale, a remarkable drink all around. This was enjoyed during a tasting and was served in between some darker heavier brews which kept the palate happy. Wonderful aroma of lemon and other zesty citrus fruits along with plenty of spicy hops, smells like warm sunshine. A great billowing head sat atop a straw colored and hazy body. Tons of lacing clung to the glass. Near perfect body, mild and light enough to maintain a great refreshing quality. No trace of alcohol and it wasn't overly yeasty or sweet as some Tripels tend to be. Good yeast flavor with some pepper notes and a hearty citrus taste. Pale and biscuit malt added a good grassy quality. Great technique went into crafting this.
