The inspiration for Bog•Water came from the Alfred Bog, a truly unique feature of Eastern Ontario. In designing Bog•Water, we wanted to conjure up the emotions of a solitary walk through the bog at dusk. The malt and yeast profile is that of a Belgian Dubbel, a very contemplative and complex ale, and we added an interesting twist: instead of hops we use wild harvested bog myrtle; an herb used in brewing extensively until the 1500s. The result is a beer style we can claim is truly our own, an Eastern Ontario Gruit. History & Style Before the introduction of the Bavarian Purity Act of 1516, many herbs and spices were used to flavour and preserve beer. Bog myrtle and hops were two of the most dominant herbs and in parts of Europe bog myrtle was so extensively used that you could pay your taxes with it! While on the whole, the purity act was a very good thing for health and quality of beer, it had the unfortunate consequence of destroying many excellent interpretations of beer that used herbs other than hops as an aromatic and preservative. Because of this, there are no longer any recognized styles or recipes for a brewer to rely on for reference. This is both challenging and freeing – as we are literally creating a new style of beer by venturing back in time to brew with this herb.

    The beer pours a hazed light rust colour with a half inch tan coloured head. Aroma is sweet malt, caramel, funky yeast, and spices. Mouthfeel is medium bodied with sharp carbonation. Flavour is very unlike the aroma with a salty bitterness replacing the sweetness. Weak caramel and yeast also noted in the palate.

    Poured a pretty thick amount of head but went away quick. End up with a thin coat of bubbly head. Has a really dark hazy amber appearance. Something smells a little burnt within aroma, like smokey wood or something to that effect, which is fine. Upon first sip, I was somewhat turned right off with the sourness and bitterness. Sort of like dark cranberries and spicy cloves, nuts, roasted malts. weird. Very sweet and strong bitter aftertaste. Alcohol is slightly apparent, just enough. Once it warmed up a bit, seemed to calm down and went down a bit easier. Don't think I can stomach more than one bottle though. Tastes ok, just not a continuous chugger. Weird mixture of flavours which just didn't sit well with me.

    Pours a copper colour with a beige frothy head that last a while, but does not stick to the glass much. Mild beautiful aromas found in a Belgian ale with soft spices and yeast. Medium-bodied. Roasted malts that taste more sweet than burnt with notes of bananas in the finish. Pretty cool that they use wild harvested bog myrtle instead of hop. Nice and easy drinking spicy ale, but does not warm up much for those winter day (or nights). Still, a pleasant different brew that is mild overall (which it was stronger in all aspect).

    Sampled at Mondial: Puts a turbid rusty-brown ale in the glass, small 1finger tan cap laces modestly.. Lightly carbonated. Pungent aroma: musty-toffee-citrusy-floral, dried fruit-herbs, spices, smoked almonds...wonderful mélange of aromas. Like a herbal brown ale. Flavor profile is almost replica of the aroma but more intense: toasty-nutty-toffee malts provide a base to balance off lemony-herbal bittering and a wonderful complexity of musty-spicy-malty-fruity-nutty flavors....long wet finish. This has a wonderfully quirky complexity that is sure to be misunderstood by unseasoned palates but for those who can appreciate the melding of a number of uncommon complimentary flavors, this is a brew you can relish and not be shy about having a couple.
