Imperial Stout is the biggest of the black beers and to drink Baird Dark Sky is to experience a foreboding libation. The aroma is gorgeously complex (dry hopping with American Centenniel & Amarillo hops) and the flavor is a stunning smorgasbord (chocolate, toffee, herbs, coffee, licorice, etc.). The mouthfeel is soft and enveloping. The finish is piquantly acrid and warming (alcohol approximately 7.6%).

12oz bottle, 9% abv. Very tasty beer with dark chocolate, licorice, tobacco with a bit of vanilla and a slightly bitter finish. Aroma is sweet, dark chocolate and alcohol. Thinner mouthfeel than expected but smooth. Appearance is only blah. Didn't realize this was $7 a bottle. That's a bit steep.

    22oz bottle -

Suprised to find this and several other offerings from Baird at my local BevMo. Intrigued by an imperial stout from Japan, I got this and the other bottles. The aroma carries aromas of dark chocolate, molasses with a touch of alcohol burn. Flavor has a strong showing of dark chocolate, very dry and it dominates pretty much everything in the flavor other than a strong showing of chocolate. Mouthfeel is on the lighter side of things, but still dense enough to notice its not a watery lager. Overall, not a bad imperial stout. Far from an elite stout, or even an above-average "damn this is good" stout. The one dimensional chocolate and alcohol notes detract from the overall enjoyment of the beer.

Sampled on 5/28/2011. This Imperial Stout pours a deep eclipse color from a 22oz bottle. Small to medium sized tan foamy head. The aroma is chocolate and coffee, tobacco and licorice. A medium to full bodied Imperial Stout. The malts are chocolate and coffee, semi sweet. The hops are herbal and earthy. Nice carbonation. Very well balanced. Very drinkable Imperial Stout. It not over the top, its not aged in a barrel, they didn’t add magic beans or weasel poop coffee. It is just a very solid well made, nicely balanced Imperial Stout. Mouthfeel is full and round. Finish is clean and smooth. Aftertaste is slightly bitter.

an interesting mix of stout flavors that are not always found in the same stout. chocolate, hops, licorice, dark fruit are all prevelant, though it wasn't quite as hoppy as i thought it would be. thick full feel, but really a well-rounded medium bodied impy stout. a very good beer, barely above average for the style.

The first whiff of this beer was surprisingly yeasty, but subsequent sniffs caught the aroma of a good imperial stout: smoky with tones of roast coffee, molasses and unsweet chocolate, as well as a hint of miso. It pours a rich, opaque sable with a fairly thick, fine-bubbled tan head that leaves quite a bit of lacing. Mouth filling smoky flavor has tones of quality coffee, chocolate, caramel, licorice and toffee. There is also a fair alcohol kick, but this complements the rich flavor rather than overwhelming or even dominating it. Flavor is quite tingly and edgy, hardly smooth, thanks to a strong fizz and the alcohol bite. Recommended to all stouties.

Pours out in an opaque really dark brown colour with a small beige lasting foam. Rich and deep velvety soft malt aroma of roasted malts, plums, dark chocolate, mint and figs. Full-bodied and chewy flavor of roasted malts, almonds, figs, raisins and plums. Velvety mouthfeel. Long warming finish of coffee, dark chocolate, vanilla, plums and figs. Delicious stuff!
