"INFUSCO" was inspired by a unique yeast's ability to gently weave character and flavor into the beers it ferments. A sweet body balanced with a big alcohol warmth and a touch of hops. Lingering rich flavors add to the complexity. Try aging this one for a year or two at cellar temperatures and compare the flavors that will emerge. For a "SLOW" experience pair this with smoked cheese, baked whole grain crackers, blackened peppercorn rib eye steaks, rich dark chocolate, hazelnut crepes or a fresh dark wrapped maduro cigar.

A dark brown to almost black appearance. Some peppermint, caramel, and chocolate aromas. The flavor consists of more mint, plums, chocolate, and molasses. The finish is slightly alcoholic and sweet. Not bad but nothing to jump up and down hollerin HELL YEAH! about either.

This Belgian Strong Ale pours a dark amber color form a 22oz bottle. Small sized white foamy head. Aroma is licorice, brown sugar and malts. A medium to full bodied Belgian Strong Ale. The malts are fruity and sweet, lots of brown sugar, molasses and licorice flavors, and they are the dominate the flavors. Yet the other flavors mix in as well, some grapes, some yeastiness, some oak and some earthiness. There is a touch of an alcohol bite. I still am not sure if I liked this beer. It is one of the weirdest beers I have had in years. Mouthfeel is full. Finish is clean and smooth. Aftertaste is slightly bitter.
