Dernière volonté (French for "Last Will") is a mix of Belgian and English brewing traditions. Complex flavours of hop flowers and spicy, fruity esters from our belgian yeast are perfectly balanced with the robust flavours and aromas of malt. The finish is commandeered by an assertive aroma from dry-hopping. The Dernière Volonté was born in our Montreal brewpub in April 2004

    Bottle. Colour - murky straw colour, huge frothy white head, good lacing. Aroma - floral hops, Belgian yeast, spices, grass, sugar. Mouthfeel - light bodied, highly carbonated. Flavour - light yeast and citrus notes with grass and spices in the finiah.

    341 ml capped bottle. Poured in the original Dieu du Ciel beermug an unfiltered and almost opaque golden-yellow coloured B A with a one finger creamy, fine, dense and almost white foamy head that had a very long retention and tons of micro bubbles. Active carbonation. Great lacing. The aroma is sweety malts, bready, candy sugar, spicy, cloves, fruity, lemon, grapefruits, mango, flowery hops and a honey touch. The flavour is yeasty, spicy, citrus peels, cinnamom, vanilla, cloves and a peppery touch and fruity, peaches, citrus, mango. The mouthfeel is creamy, quite fulled and mellow. The texture is oily. This medium to full bodied B A has a lingering hoppy bitter finish. A convincing mix between the bitterness and the yeasts. Well done, Jean François !

    Pours a cloudy yellow with an excellent huge white head. Great retention and lacing. Aroma is fruity and spicy. Taste is of malt, yeast, fruity, mildly spicy and hops. Thin body, with massive carbonation, lemon spice finish.

    Very floral and spicy aroma. More malt and Belgian yeast in the flavor, though some citrusy hops hang around too. Pretty nicely done. Dry, spicy finish.

    Poured a good size foamy white head, with sediments clearly visible. Fairly hazy appearance. Strong cirtus/hops aromas. Great citrus flavours, with lemons, oranges, and others coming through. Also a bit yeasty, very tasty and smooth. Pretty good tangy mouthfeel. This one is clearly not an obvious strong beer, even with the 7% abv. Its's not quite apparent at first, great easy drinking beer. Last Will? Pretty darn close!

    It pours a hazy burnt-orange and light-amber with a thick and foamy white head and copious lacing.     I tried this beer on October 1, 2010 at "Smokeless Joe's" in Toronto, Ontario, Canada. The beer poured a hazy gold colour with a huge frotyhy white head that persisted. The aroma was yeast, some hops, and sweet malt. The mouthfeel was medium bodied with medium carbonation. The flavour was yeast, citrus, some sweet malt, and spices.

    Bottle: Decants a hazed golden ale in the glass with a massive cap that lasts out the drink. Aromas of apricot, spice, honey, some musty earthiness...I’m shocked at how close this aroma is to Schneider Hopfenweiss...gorgeous! Sandy mouth feel, light body, fruity-hoppy character. Lovely rush of sweet malt in thefront is instantly balanced with leafy-hearbal bittering and fruity esters...subtle complexity mid palate - eartgy-mustiness mingles with honeyed grassy tones leading to a crisp dry finish. Excellent rendition of Orval, less complex but more drinkable.

    Comes in bottles now at the LCBO, with 7% ABV. Pours a cloudy beige-orange colour with a big amount of tiny particles floating everywhere. Its off-white head is beautifully creamy, long lasting and creates great lacing. Nice aromas of spices, Belgian yeast, mild earth and quite hoppy as well. Refreshing dry mouthfeel. The taste has the hop, again well-balanced, with a good mix of sweet fruits and the Belgian goodies. Very well-balanced Belgian-style beer that I would drink anytime.

    Bottled@Bishops Arms Vasagatan, Stockholm. Hazy golden orange colour with particles floating around. Aroma is spices, caramel and some mild wood. Flavour is wood, spices, some earth and mild herbal notes as well.
