Chaman is a dry-hopped strong beer with strong amber hues and dominating hop flavours and tastes. It is however well balanced through the presence of a combination of malts, and alcohol is present is not overwhelming. Thus, it is a very complex and bitter beer, but always well balanced. Chaman is brewed only once a year, and is sold in May until stocks last. The Chaman was born in our Montreal brewpub in October 2002

    Pours a hazy orange. The short lived head leaves a little lacing. Lemon and floral aroma. Well balanced flavour of caramel malt sweetness, orange peel and lemon. Also a has a herbal and floral taste. Medium oily mouthfeel. A little different from most Imperial IPA’s but drinkable and enjoyable.

    Pours a good size frothy head and dissipates to a thin coating. Good lacing. Has a slightly hazy coppery appearance. Aromas of grains, malts, resin hops and citrus hops. Flavours of citrus hops, malts, breads, a bit of yeast, nuts and notes of toffee. Fairly good balance of hops and malts. Alcohol is just barely noticeable in smell and taste. Goes down pretty easy though for 9%abv. Slick and slightly warming mouthfeel. Average carbonation. Really nice balance of bitterness and sweetness. Another pretty good DdC brew with great bottle labels!

    Bottle – puts lightly hazed orange-amber ale in the glass – large puffy cap lasts and laces up the glass. Moderate carbonation. Aroma is toasty cereals over an amalgam of hop aromas; citrus, floral, grassy – some lush fruit tones as well….becomes more pungent as it warms. Very pleasant nose to this. Medium-heavy body but lighter and dryer in taste than the body and mouth feel suggests. Flavour is rich and definitely a pale ale on steroids – Big rush of hops and malts in good balance in the front side…..mid palate you get some complexity as fruit, bitter, resinous, malty, fruity flavours bend. – long silken rich finish with increased bittering. I was surprised at how well rounded and balanced this big pale ale is. Another solid offering from DDC.

    4-pack at the LCBO. Pours a clean, rich amber colour with a creamy, off-white head, that has great retention and thick foamy lace. Does not smell too hoppy at first pour, but the hop nose comes out eventually with spicy grass, citrus notes and a warming alcohol. No burning for the mouthfeel though. Nice cereal malts (barley) with the bitterness covering it, but not too excessively, giving a beautiful dryness. Hints of grapefruit, burnt caramel and grass. Nice difference on the style, with this Imperial Pale Ale, which is differently hopped than Impy IPAs.

    The beer poured a hazed golden orange colour with absolutely no head, but effervescence created a small ring higging the glass. Aroma is weak spices, citrus, caramel and grains. Mouthfeel is medium to full bodied with mild carbonation. Flavour is piney, citrusy, and grainy. A good beer, but I was hoping for more

    Beer claims on the label to be an “Imperial Pale Ale” whatever that is…….a not so hoped version of an IIPA? Beautiful honey brown that’s slightly hazy, thick cap, massive lacing, wicked retention. Beer sure does look pertty Ma……. I'll gives this aroma a score of meh..but yummy, woody alcohol, peach, un-named citrus, pine, & caramel. Taste is kind of what I thought the beer would be a big heavy malty IIPA with the hop profile of an APA. Toffee, pine, wood, slight alcohol burn, melon. More not so sweet malts. Odd style and it makes sense why its listed as an IIPA but if I wanted a true IIPA I wouldn’t buy this.

    07.09.05 Bomber at brewpub, RBSG. Hazed orangish amber with an ample though fading off-white head. Smells a bit like rain soaked clothes...wait, maybe that’s just me. Lots of Belgie yeastiness in this one. Something fresh and springlike about it. Every sip is more yeast, pit fruits. Plenty bitter but not much hops present in flavor. Thinner body is small for the style.

    Poured a hazy orange color with a thin, off white head that left nice lacing on the glass. Aroma of tons of citrus hops, spices, and light maple syrup. Taste of crisp orange hops, lots of citrus, light caramel malt, and a touch of alcohol.
