Coeur de Saison: "Heart of the Season"! This is the second beer that we have produced using a blend of special Belgian Yeast Strains. The first was our Holiday Saison which used used coriander, orange peel, grains of paradise and star anise to accent the flavor of the spicy Belgian yeasts. This time we toned back on the spices a bit. There is just a hint of anise and a background pepperyness from the grains of paradise but most of the flavor really comes from the yeasts. This is also just a touch stronger than the Holiday was and the alcohol contributes a warmth of its own. Served unfiltered but fined, so expect a bit of a haze.
