Before early settlers began cultivating cranberries, they grew wild in natural bogs across Canada. As one of only a few fruits native to North America, we used cranberries to create this refreshing, thirst quenching, and uniquely satisfying cranberry sour. We introduce lactobacillus to sour the wort pre-fermentation, and then we ferment with English yeast to add a light yeast character. Finally, we finish off with a heaping helping of cranberries to create a sour that is just tart enough to cool you off on a hot summers day.

    First off, I want to say that there are too many wild ale/sour ales/goses being made by Ontario brewers. It needs to stop! The beer pours a highly hazed pinkish-gold with a very short lived white head. The aroma is yeast, grass, and tart cranberries. The mouthfeel is thin to medium bodied with average carbonation. The flavour is primarily on the tart side with some weak grains. While the flavour is tart, it doesn’t scream cranberry to me.

    Hazy, light golden colour with a fizzy white head that dissipates quickly leaving a small ring around the collar. The lactobacillus sour nose shows, but the cranberry is a little light in here. Well, it seems like it is even lighter in the taste. There is this nuttiness instead with the yeast. Light tartiness. Really not my thing. If more cranberries where in there, should be better.
