Systema Naturae (System of Nature) is an exploration of scientific processes and ingredients exhibited throughout the natural world. This edition of the series, Maple and Spruce, brings on winter from both sides. The cozy taste of maple syrup reminds you of warm morning fires, and the spruce brings memories of brisk white wonderlands. Fermented with our house wild strains of saccharomyces waterloo and lactobacillus lucian.

    Pours clear amber with a thick buff head. Aroma offers maple syrup, malty and subtle spruce notes. Flavor yields more maple, some crisp and tart pomme, a bit more evergreen. Mouthfeel presents fair body and good fizz. Love the system.

    I love sour ales, and this is the second one I've tried from a brewery in the state I work in. This particular version features sweet maple with hints of spruce in the back. Very interesting and very good. Little carbonation. Reddish brown color with some yeast in the bottle. Quite tart and fairly sweet but with a medium body that doesn't overdue it. A nice sour ale with two ingredients that play together well.
