The Companion is brewed in an old style called “wheat wine”, a wheat-based equivalent to barley wine. The floor malts give this beer a juicy malt character of considerable depth, 55% malted wheat gives it a surprising lightness on the palate, while our house ale yeast lends a gentle fruitiness. The Oxford Companion to Beer will impart knowledge, while The Companion imparts conviviality. Maybe you really can have it all? The Companion Style: Wheat Wine Malts: Weyermann floor malted Bohemian Pilsner malt, Weyermann floor malted Bohemian Dark malt, Weyermann floor malted Wheat, Weyermann pale wheat malt Hops: Domestic Willamette, German Perle, and Styrian Goldings hops Alcohol by Volume: 9.1% IBUs: n/a Original Gravity: n/a Calories: n/a Food Pairings: Roasted vegetables, lamb stew, a huge book. Supplied by BlueLou at Irishpfist, took us awhile to crack it open but it sure went fast once we did. Pours a red color, very clear with golden hues in the light. A bit of a grassy nose with backgrounds of thick sweetness. Flavor is a super sweet wheatiness, some corn, a bit of hops and apricot jam. Good boozy wheat wine.

Special secret reserve from the Brooklyn rep for East Tennessee and this region, on tap at a private tasting and pairing @Bearden Beer Market for Knox Beer Crew. Nearly clear reddish amber pour with a slight bubbly near-white head and some lacing. Sweet fruity and floral aromas- complex especially after warming - tinge of alcohol though well-hidden, honeysuckle, light caramel. Taste is very nice: nicely fruity, a touch tart, a bit more on the sweet side than anything - caramel, light honey - then floral, honeysuckle, a touch of clementines... Wow, this is very very good! Took balls to brew it, Success! (Even scored a growler of it out of the deal!)

Houston Flying Saucer, Dec 2nd 2011, first beer of the birthday dinner .. . Pours a medium murky tan brown .. medium foam .. . sugary sweet, caramel, yeast, and light wheat .. . hides the abv quite well .. pretty tasty but lacks an edge .. . . are those siamese cats? well, they are connected..
