Beatification is a 100% spontaneously fermented beer using the oldest barrels that no longer have any wine flavor or oak flavor left in them. However, a cocktail of "bugs and critters"(Saccharomyces, Brettanomyces, Lactobacillus, Pediococcus & other wild yeast & bacteria.) remains in the barrel. This isn't the only place where the beer picks up its ability to ferment, before the unfermented beer heads into the oak barrels, the beer has already sat "horny" and picked up many other wild yeasts to start its life towards a true, spontaneously fermented beer.

    Pours with a clear, golden-orange body topped by a thin to medium thick, white head with little lacing. It’s tart and sour with notes of horseblanket and an underlying citrus note. Light to medium bodied, crisp and a touch dry.

    [PH1] Poured a cloudy, yellow red color with a small white head that left nice lacing on the glass. Aroma of brett, lemon peel, sour grape, white pepper, vanilla, tropical fruits, honey dew, cherry, and strawberry. Taste of lacto, brett, vanilla, citrus, and green apple. Phenomenal beer!

    Batch 001. This Flemish sour ale pours a hazy deep orange color from a 330ml cork finished bottle. Medium sized white foamy head. Aroma is tart, must, barnyard, bretts, citrus, oak and leather. Medium bodied Flemish sour. Malts are tart, fruity and woody. This is a VERY tart and sour ale. The bretts and oak are very prominent in this beer. Crisp and dry. Lively carbonation, almost sharp, like a champagne. There is an interesting interplay of citrus, lemon, horse blanket, old books and wood. Sharply acidic, tart and dry throughout. The dryness and tartness reminds one of a Berliner Weiss almost. Awesome beer. Mouthfeel is full. Finish is crisp and dry. Aftertaste is tart.

    Bottle, batch 001. cloudy honey golden color with a white head that quickly disappears. The aroma is like cider vinegar. this is a sour puppy. It's nicely done, but you have to be in a 'sour' beer mood
