A biere de garde or farmhouse beer. It's brewed exclusively with French pale malt and German hops. A long boil develops a deep amber color and malty complexity. A small amount of black pepper in the boil contributes a subtle spiciness. The beer is fermented with a wonderful monastic lager yeast and the finished beer is bottled-conditioned and packaged in 750 ml. corked bottles. The bottle wears a label of beaux art. It features an image of an abstract painting by Canadian artist: Christine Haley.

"07.10.04. Beaker of beer at Heavywieght open house. I’ve sampled this beer a number of times in the past at a greater maturity and always enjoyed it. Today I sampled a very young (5 month old) taste of the new batch. It’s a rather opaque, amber brew with a gigantic head and sticky lace. Aromas are subtle, fresh, and spicey. the yeasts don’t dominate ne nose, letting the grassy maltiness come through. A bit crisp and weedy in the front, then a shift to fresh and juicy bell pepper and ripe summer fruits (this seems to be replaced by an emergence of a young mustiness with age). Nice beer. Some of the older bottles can get a bit funky in a rubbery sort of way if the corks don’t hold up, but Tom says that he has resolved that problem. This new batch seems like it will be great."

"When poured without the sediment the body is gorgeous, a bright glowing rosy copper that is warm and inviting. The head starts off an off-white sandy foam but fades quickly, although there is a constant cascade of small bubbles. Later in the bottle with the yeast, the beer becomes a cloudy brown and loses a lot of its beauty. The aroma is lemony (almost like lemon scented cleaning chemicals), grassy. The flavor has that same something that the Jade French Country Ale had. Venom described it as wet pennies, and I didn't think of it until then, but it really does taste like copper, especially with the surprisingly bitter hop bite. Bitter grass. A bit of caramel, spicy. Tasty beer, but a surprisingly bitter one. Almost unbalances itself. I think this would age nicely."

"Medium gold color. Small head. Aroma is fruity, funky and yeasty. A medium bodied saison. Malts are fruity and sweet. Bright yeasts. Funky and musty. Lots of coriander and apricot flavors. Nice balance. Nice beer. Mouthfeel is full and round. Finish is clan and smooth. Aftertaste is sweet and tart. "
