Palo Santo Marron
(Holy Tree Brown)
This beer is a 12% abv, highly roasty, and malty brown ale aged on the wood of the Palo Santo tree from Paraguay.
Palo Santo means "holy tree" and it's wood has been used in South American wine-making communities.
We were lucky enough to get our hands on 20 blocks of the super-dense wood and the wood was added to the ageing tank after fermentation.
This beer will be served exclusively at the pub and featured at the November 2006 Fancy Beer Dinner. Come and get it while it lasts!

"I was on my way to the checkout counter of the liquor store when I spotted this beer on display. I never heard of it before, but I knew if it's Dogfish Head it's gotta be good! So I grabbed a 4-pack after a quick read of the label. I was definitely pleased with the purchase. Poured a very dark beer with dark brown head. Strong, woody aroma with a roasty sweetness. Goes down smooth for such a powerful beer. Fairly sweet, but delicious!"

"This is a heavy dark beer with a big alcohol nose and a thin head. I think the 12% took away from some of the complexities present. There is vanilla, molasses, and wood flavor in the beer and even drinking just one of these can sneak up on you."

"pours a dark brown .. pretty stable dark tan head ... smells of dark molasses and week old burnt wood ... interesting brew but lackluster.. not that complex but somewhat enjoyable .. i like the idea behind this but i wanted more wood or something.. a bit disappointing!"

"Pours a thick dark black colour with a little brown head. Aroma os bananna, smoke, coffee and wood. Mouthfeel is rich, thick and creamy with flavors of oak, chocolate and coffee grounds. Sweet but not overly rich flavors throughout the beer. Finish long and lingering, taste definately stays with you for a while."

"Cask at the GBBF 2008, gravity dispense. Black colour, no head. Alcoholic but interesting aroma and flavour, notes of "oak" (actually palo santo wood), coffee and fortified wine. At 12% ABV this is powerful stuff. Good, but not easy drinking."
